Fish Masala Fry | Fish Masala Fry Oriya Style | Odia Recipe








 

       
        Preparation time:10 minutes
      Cooking time:20 minutes
      Serving : 3


Ingredient:

  1.  Fish, 250 gms(any variety of fish)
  2.  Turmeric, 1 tsp
  3.  Red chili powder, 1 tsp
  4.  Mustard seed, 1/2 tsp
  5.  Cumin seed, 1/2 tsp
  6.  Green chili, 2nos
  7.  Fistful of cilantro/dhaniya
  8.  Oil, 3-4 tbsp 
  9.  Salt to taste   


For Masala:


  1.  Garlic clove, 8-10 nos
  2.  Tomato(chopped), 2nos(medium
  3.   Cumin seed, 1/2 tsp
  4.   Red chili, 2 nos  



      
    Method :

  1.  First marinate the fish with turmeric and salt.
  2.  Make a paste of garlic,tomato,red chili and cumin seed    using blender(don't use water) .
  3.  Heat the tawa ,add little oil and fry the fish both side till  golden brown and keep aside.
  4.   In another pan add oil,when oil become hot add  mustard seeds and cumin seeds.
  5.  Then add little bit of turmeric and chili powder ,then add prepared paste.
  6.  Then add green chili and salt to taste and cook for 5 minutes.
  7.  Then add cilantro/dhaniya and fried fish and cook on high flame till the masala become dry.
  8.  Fish masala is ready to serve with rice or roti.

Sweet Tomato Chutney | Tomato Khatta Oriya Style | Odia Recipe



       Sweet tomato chutney recipe, prepared commonly in eastern part of India. It can be served both hot and cold and can be refrigerated to be used for 2-3 weeks.Chutney can be served with plain rice or with indian bread.



Preparation time : 30 minutes
Serving : 4 


Ingredients Required : 

 

       1. Tomato (Large): 5-6 nos
       2. Green chili : 2 nos 
       3. Curry leaves : 5-6 nos
       4. Ginger paste : 1 tbsp
       5. Dates : 5-6 nos
       6. Mustard seed : 1/2 tsp
       7. Turmeric : 1/2 tsp
       8. Jaggery : 2 tsp 
       9. Saunf powder : 1/2 tsp 
       10. Roasted jeera powder : 1/2 tsp 
       11. Oil : 2 tsp 
       12. Salt to taste 

How to prepare recipe : 

    
  • In a pan heat the oil , add mustard seeds.when seeds begin to crackle add curry leaves , green chili and ginger paste and cook for few minutes.
  • Add chopped tomato and cook until it is little tender. Then add turmeric , salt , dates and jaggery . Cook for 2-3 minutes.
  • Then add little water, cook for 2 minutes .Then add saunf   powder and cook for 5 minutes on medium flame.
  •  Finally add roasted jeera powder and switch off the flame.
  •  Sweet tomato chutney is now ready to serve.   


  

Mushroom Dum Biryani | Vegetables and Mushroom Dum Biryani





        Preparation time : 30 mins
       Serving : 4
         

       Ingredients:

  •   Basmatic rice: 1 cup
  •   Mushroom : 500 gms(Button mushroom)
  •   Onion(Large):2 nos (sliced)
  •   Tomato(Large): 1 no(Chopped)
  •   Ginger-garlic paste: 2 tbsp
  •   Carrot: 1 no (Chopped) 
  •   Beans: 4-5 nos (Chopped)
  •   Green chilly: 2 nos(Chopped)
  •   Fistful of chopped Cilantro
  •   Fistful of chopped Mint leaves 
  •   Turmeric: 1/2 tsp
  •   Red chili powder: 1 tsp
  •   Biryani masala: 1 tsp 
  •   Yogurt: 3 tbsp
  •   Garam masala: 1/2 tsp 
  •   Oil: 2 - 3 tbsp
  •   Ghee: 1 tbsp 
  •   Salt to taste

      Dry spices:


  • Bay leaf: 1 no
  • Cinnamon: 1 inch
  • Cloves: 2-3 nos
  • Cardamoms: 2nos
  • Whole pepper: 4-5 nos 


    How to prepare recipe: 

     

     1. Soak the rice for 3o mins and after 30 mins drain the water and cook the rice untill   half to three quarters of the way.

     2. Heat the pan add 2 tsp of oil,when the oil becomes hot add mushroom n fry it untill it become soft n brown in color then remove it.

    3. In the same pan add 1 tsp of oil and fry the  veggies(Carrot and Beans) and remove it.

    4. Heat another pan,add 2 tsp of oil and 1 tbsp of ghee.

    5. When oil becomes hot add all whole spices, fry it till aroma comes.

    6. Then add sliced onions and saute till translucent.

    7. Next add ginger-garlic paste,green chili,tomatos,half of cilantro and mint leaves.

    8. Saute this mixture till the tomatoes soften.

    9. Then add turmeric,red chili powder,biryani masala and salt.

    10. Stir again very well so that the masala or dry spice powder gets mixed evenly with the rest of the mixture.

    11. Then add yogurt to the mixture and saute it.

    12. Then put mushroom and veggies,saute on a low to medium flame for 5 to 6 mins.keep on stirring at intervals.

    13. Then add cooked rice,sprinkle some cilantro and mint leaves and garam masala.

    14. Cover the pan with lid and cook for 10 mins on low flame.

    15. Serve the mushroom biryani with cucumber raita.


    Recipe notes:

     

          I have made this biryani with button mushroom but you can make this mushroom biryani with any variety of mushrooms.

                 








Simple Chicken Masala | Simple Chicken Masala Gravy


Preparation time-30 minutes
Serving-4

Ingredients:

  •  Chicken(Washed) : 5oogms
  •  Chopped onion(medium) : 1 no
  •  Chopped tomato : 2 nos
  •  Chopped garlic : 2 nos
  •  Chopped ginger : 1 knob
  •  Chopped green chilli : 2 nos
  •  Chopped capsicum : 1 no
  •  Chopped coriander leaves
  •  Cooking oil : 3 tsp
  •  Turmeric powder-1/2 tsp
  •  Red chili powder-1 tsp
  •  Soya sauce : 1/2 tsp
  •  Vinegar : 1/2 tsp
  •  Tomato sauce : 1 tsp
  •  Salt to taste

Marination :
  • Ginger paste : 1 tsp
  • Garlic paste :1 tsp
  • Turmeric : 1/2 tsp
  • Salt : 1 tsp


Method :
  • Wash the chicken and marinate ginger and garlic paste ,turmeric and salt for 30 minutes.
  • Heat the kadai ,add oil into it and let it heat.
  • Add chopped ginger and fry it for a minute then add chopped garlic.
  • Add chopped onion and green chili , fry it on medium flame for 4-5 minutes.
  • Add  turmeric powder, red chili and salt,mix it and cook it for 2 minutes.
  • Add chopped tomato ,saute it till tomato cooked properly.
  • Add marinated chicken and saute it on high flame for 2 minutes
  • Stir occasionally and cooked the chicken on medium flame for 10 minutes.
  • Add chopped capsicum and fry it for 2 minutes.
  • Add soya sauce,vinegar and tomato sauce,saute it for 5 mins.
  • Sprinkle some cilantro/coriander leaves and switch off the flame.
  • Chicken masala is now ready to serve with paratha , naan etc.
